Jesus didn't rebuke his mother. He knew, though, that once he started performing miracles, that the time-clock to his crucifixion would begin. Nevertheless, he loved his mother, and he honored her request.
I would not doubt that his mom was concerned about running out of wine possibly because she was one of the people responsible for coordinating some things in the wedding. She knew her son was wise and annointed, and simply told the men, "do whatever he tells you." For all we know, she may not have had any idea how he was going to handle it.
