Thanks for all the ideas guys!!! I'll definately be trying some of them out. My mom used to make chicken and rice with cream of mushroom soup when I was a kid and it was really yummy. I should bring that one back.

I checked out the Hillbilly Houswife website. It had some good ideas, but I just can't wrap my mind around the idea of not having some kind of meat for dinner. We always had meat every night when I was growing up, even if it was jsut hot dogs. :lol2 She suggested just having beans, rice, and veggies for dinner some nights. I just can't imagine not having some chicken or beef too. What do you guys think? Is it normal to not have meat with dinner some nights?

Plan your weeks worth of meals around what meat is on sale that week..... Tasteofhome.com has lots of budget recipies and it's food that real people eat....Also, when you find chef-boy-r-dee beefaroni on sale, buy two cans and fry up some hamburger (a pound or a little more) with a little bit of onion and add it to the beefaroni...season will season-all and some garlic salt and garlic powder (to your liking), throw in some frozen corn (optional) and cook 'till it's all hot. You can serve on a bun or flat bread if you like (like a sloppy joe). I shred some cheddar cheese and top the beefaroni with it. It sounds icky but it's really pretty good! You can also make less by using one can and less than a pound of hamburger.... here's another one that sounds weird but is pretty good...add a can of drained tuna to your boxed macaroni and cheese (I use kraft so I don't know what it would be like with another brand).....mmmm.

You know, I just remembered something. We do have meatless meals sometimes! We have grilled cheese sandwiches and tomato soup for dinner sometimes. That doesn't have meat!!! :doh It just didn't register to me! :lol2

I have the exact same problem....I use the crock pot A LOT...you kind find a lot of good recipes that are cheap online....I just do a search on crock pot recipes..and lots come up....i also get store brand everything!!....or whatever is on sale at the time...

Chili Mac
1 can chili no beans
enough pasta to feed you and DH
cook pasta til done - drain
stir in chili
you can add shredded cheddar cheese on top if you want

I will have to try adding apples to tuna casserole! Never heard of that and it sounds delicious!

Another unusual tuna combo that I love and it also fairly frugal, is making your own pizza with tuna and sweet corn. Sounds odd but it is delicious. Either buy the dough, make your own, or buy pre-made crust... add sauce, tuna (drained), can of sweet corn (drained), and cheese. Mmmm.
