Here's a simple recipe that kids can make for themselves. Open a can of refrigerated biscuits. Flatten the middle with the bottom of a small glass. Spread with spaghetti sauce. Top with grated mozarella cheese. Pop in the oven and bake for about 10 minutes at the temperature suggested on the can of biscuits. My son loved cooking these little pizzas for himself and a few friends when he was in grade school.

WOW the memories that brings back!!! I used to make this for lunch all the time when I was a kid!!! We called them "Biscuit Pizzas". Of course I had to put some sliced pepperoni on mine- it's not pizza if there's no pepperonni! :lol2

Chicken, fish, porkchop you can put spices or barbecue sauce (not on the fish) in the oven. Set to 350, and cook until done. I don't time, I just watch. I have something easy with it, like bagged salad (not Dole's and I wash it first), frozen broccoli or other vegetable, or green beans which I boil until they are soft.

If it's like tilapia, you can just place it on a plate, wet a paper towel, cover the fish with it, and microwave it for 5 min or so until its color changes. This is best for single servings though.

Sometimes I'll get shrimp--The raw headless kind, and boil until all pink--or sometimes I'll get precooked at a Costco or something, if that doesn't have too much sodium. I'll boil that too, but not as long. I like to melt a tiny bit of butter on that, and put some garlic/herb seasoning on top. Have with a vegetable.

Lunches - sandwiches for school, but for at home usually leftover dinner food.

My husband loves when I make beef sandwiches. I just buy a roast, it doesn't have to be expensive because everything comes out tender in the crock pot. Cook it all day on low (about 8 hours) or just the afternoon on low (4-5 hous depending on size). When I put the roast in the crock pot I add my seasonings and beef gravy and peppercini's -- I use to add the juice but it was too salty for our liking, but it had great flavor. Then after it's cooked I shredd the meat with a fork and put it on french rolls. It has to be a thicker type of bread to hold up to the juice from the meat. When I make this my husband eats it for the next few days. He loves it.

French Dip

Basic:
1 rump roast (5 lbs)
1 pkg onion soup mix
1 can/bottle of beer (can be non-alcoholic kind)
1 can beef broth (or you can use 2 cubes beef bouillion and 1 C water)

put in crock pot. Cook all day on low. When ready to eat, slice beef into thin slices and serve on hoagie rolls. This makes several meals depending on how thick your slices are and how many sandwiches you make for each person.

You can fry up some mushrooms, peppers and have swiss or mozerella cheese to put on top the sandwiches if you want as well.

I've been running out of ideas too,,,,,,,
when I was at my sons football practice us moms started talking about omelets,
by the time i got home, i was hungry for them, but wasn't really in the mood for trying to flip them. so i just scrambled up some eggs, with cheese, onions, mushrooms, green peppers, tomatoes and a side dish of little chopped up potatoes. My usually picky (kids) eaters were very very happy with this "breakfast" supper,
hmmmm, i was surprised, my son said he could eat this every day,
lol

I've seen meatloaf listed already but not the way my wife makes it.

You make a layer of groung beef. Then cover it in bacon. Cover that in cheese. Finally a final layer of ground beef on top. Now you have one BIG bacon cheesburger. :nod

When I was trying to feed my X on a budget, My problem was he didn't like casseroles and pasta's he wanted meat and taters ! So I figured out as long as it came close, Had a meatish thing and a potato thing and a veggie, he would eat it without grumbling LOL . One of things I cooked that he and my daughter both liked was. Well I guess we could losely call it Salsbury steak.

1 pound frozen tube of ground turkey ( trust me )
1 egg
quick oats ( add about 1/2 cup )
chopped onion
salt, pepper , garlic,

Like a meatloaf kinda recipe.. mix and form into good size thick oval patties and brown good on both sides. Leave in the pan. In a sauce pan make Knnors green peppercorn sauce mix, Pour over the patties and simmer until done and the patties are nice and juicy. Serve with mashed taters and a veggie, Home made bread . You will have to pick the peppercorns off the patty you serve to the kids as if you bite into a whole one it has a bit of a zip, that is what I did for my daughter, Anyway it LOOKS like a meat and tater meal for not much moneysince the turkey is much cheaper than ground beef and he never knew he was eating ground turkey. I use the same recipe also and make meatballs, brown, pour a can of cream of mushroom soup over them and simmer, serve over noodles, make the meat balls BIG they like BIG meat things.
Round steak simmered all day in a beef broth with onions and dehydrated veggies, then thicken the broth for your gravy, = Meat and taters meal= cheap.
London Broil buy when it is on sale for cheap which it is alot. marinate over night, grill until pink, slice it THIN .

Chicken thighs, roll in flour and seasonings, brown in hot pan with just enough oil to brown, put aside, in skillet ( big electric if you have one )
add quarted potatos, carrots, cream of chicken soup, put chicken back in , cover and simmer LOW until all is done, remove all from skillet put a small container of sour cream in the gravy stir, serve. Easy and quick and Yummy and not costly at all.
