I'm trying again.

In 2000, I went on the Atkins diet and lost 97 lbs, but lost so much weight so fast, my hair got real thin too. Went down 7 sizes in pants.

I decided to see what I could eat and how it would affect my weight because I didn't want to lose any more hair.

Consequently, I have gained weight. I am up 2 sizes in pants.

My daughter is getting married June 30 and I want to lose some again, but concentrating on exercise and portion control this time around.

I'm losing again as well.... signed up for WW online a month ago (love it!).... so far I have lost 13 pounds.... anyway- I have found quite a few really great and tasty recipes.... if anyone else is doing WW and wants me to post them- let me know.

This dessert is SO easy to make (and it's perfect for my house since my daughter is allergic to eggs).... the trick to this dessert though, is to definitely let it sit for AT LEAST an hour in the fridge before eating- the graham crackers need that time to soften a bit, and the filling needs to set so it has more of a pie texture.....

Chilled French Apple Dessert
POINTS® Value: 4
Servings: 8
Preparation Time: 15 min
Cooking Time: 120 min
Level of Difficulty: Easy

This no-bake cake is perfect for a mid-week family dessert.

Ingredients

* 27 average graham cracker(s), squares, cinnamon-flavored
* 2 1/2 cup canned sweetened applesauce, chunky
* 7 oz light artificially sweetened vanilla yogurt
* 1 cup lite whipped topping
* 1 tsp ground cinnamon

Instructions

* Line bottom of an 8-inch square pan with nine graham crackers.

* In a small bowl, combine applesauce and yogurt.

* Pour half of mixture onto graham crackers, layer with nine more crackers and repeat. Top with remaining nine squares.

* Spread whipped topping over top and sprinkle with cinnamon, if desired. Chill 2 hours. Cut into 8 squares and serve.

Here is another FAVORITE of mine- and I think the low carbers could probably have this too?.... anyway, it's a zero point cucumber salad (you can eat masses of it it all day if you want!! lol and it's perfect for summer cookouts and stuff)...

Easy Cucumber, Tomato and Onion Salad
POINTS® Value: 0
Servings: 4
Preparation Time: 15 min
Cooking Time: 0 min
Level of Difficulty: Easy

This tangy vegetable salad makes a great, healthy side dish or light lunch.

Ingredients

* 2 1/2 cup cucumber(s), thinly sliced
* 2 cup tomato(es), Roma or other fresh variety, sliced or cubed
* 1 cup onion(s), chopped
* 12 tsp SPLENDA No Calorie Sweetener
* 1 cup red wine vinegar
* 1 cup water
* 2 tsp dried dill weed


~~*NOTE*: I personally use less tomatoes and more onions just because I like the way that tastes better- you can do your own portions of each according to your own taste.... oh- and I also use a little bit less splenda than they say because I like to taste the vinegar a bit more.~~

Instructions:
* Place cut up vegetables into a glass bowl.

* Mix remaining ingredients together and pour over vegetables.

* Refrigerate at least one hour (longer is better).

* Serve with a slotted spoon so that liquid remains in the bowl. Yields about 2/3 heaping cup per serving.

Here is a great low point macaroni salad- this another great recipe for summer cookouts (I use the regular macaroni noodles, but I DO want to try the whole wheat ones because I know it will lower the points even more- just haven't gotten around to trying it out yet to see if it tastes ok).....

Macaroni Salad
POINTS® Value: 3
Servings: 8
Preparation Time: 12 min
Cooking Time: 10 min
Level of Difficulty: Easy

Ingredients

* 8 oz uncooked macaroni, elbow
* 1/2 cup reduced-calorie mayonnaise
* 1 Tbsp red wine vinegar
* 1 tsp Dijon mustard (I substituted 1/2 t. of Nance's mustard- either one is fine)
* 1/2 tsp garlic powder
* 1 cup celery, chopped
* 1/3 cup red onion(s), finely chopped
* 2 Tbsp parsley, fresh, chopped (I used 1 T. of the dried parsley instead)
* 1/4 tsp table salt, or to taste
* 1/8 tsp black pepper, freshly ground, or to taste

Instructions

* Cook macaroni according to package directions without added salt or fat; drain and transfer to a large bowl.

* In a medium bowl, whisk together mayonnaise, vinegar, mustard and garlic powder; stir mixture into cooked macaroni. Fold in celery, onion and parsley; season to taste with salt and pepper. Serve warm or chilled. Yields about 2/3 cup per serving.

Notes:
* The hint of celery, garlic and onion makes this creamy salad a super-flavorful, easy-to-prepare mainstay for your menu. For added color, stir in diced tomatoes.




I'll post some others later.... I have a great "upside-down apple pie" one (at least- that's what I call it- lol) as well.

I found out I had type 2 diabetes last July. I have no family history of the disease. I did have gestational diabetes with my first DD who was 7lbs. I was told I was borderline with my second DD who ended up weighing almost 11lbs.
I was a little over weight. I am 5"2 and weighed about 170. It scared me some much finding out I was diabetic that I really followed the diet I was given. I lost 35lbs between finding out in July and my three month check up in October. I have lost another 5lbs. Since then. My bloodsugar is just about normal now. I have tried to diet for years just so I would look better and I could never keep the weight off. Now I do it for a normal life so I can see my daughters grow up my youngest is 11.

Last year I started counting calories. I read every label and do the best I can to keep my intake at around 1500 calories per day. I also drink my water (looking around for funmudder aka the water nazi whom I adore). I've lost 20 pounds in a year's time. It has come off slowly, which is what I wanted. I am 3 pounds from my ideal body weight. I am 41 years old. I don't count anything but calories. If it's high in fat, it's high in fat. If I am anticipating a splurge at the end of the day I back it off earlier. It's worked. I'm sticking to it. It has become just a way of living now.

Ever since I've started being my brother's GoFor, by delivering his EBay packages to our local post office. I've lost more weight walking to 'n' from my car with his packages. I used to weigh around 120-119 pounds, and now I way just a tad around 111 pounds, plus I can finally wear the clothes that were once too small for me to fit in.

BTW, I'm a petite 4'9" tall, and my goal is to reach down to 99 pounds.:)
