Does anyone have a good recipe for a breakfast casserole.?

Yes, and this recipe is very good. I actually found it online. It works best if you put all the ingredients together the night before and leave it in the refrigerator overnight, but it still turns out really good if you don't. This is a hit with my Sunday School class when I bring breakfast.

Ingredients:

1 package of frozen hashbrown rectangles
1 cup milk
6 eggs
1 lb of cooked crumbled sausage
about 2 cups shredded cheddar cheese

Mix the eggs and milk together.
Layer the hashbrown rectangles in a casserole dish.
Cover the hashbrowns with the cooked crumbled sausage.
Poor the egg mixture over the hashbrowns and sausage.
Sprinkle enough cheese on top to cover.

Cook at 350 degrees until done. It should look like a scrambled egg texture and the cheese should be completely melted.

This is in an awesome cookbook called "A Taste of Heaven". I haven't tried it yet, but it looks yummy :)

Amish Baked Oatmeal

3 cups quick cooking oats
2/3 cup sugar
1 cup milk
1/2 cup butter, melted
2 eggs
2 tsp baking powder
1 tsp salt
2 tsp vanilla

Preheat oven to 350. combine all ingredients, mix well. Spread evenly in 13 x 9 baking dish sprayed with cooking spray. Bake 25-30 minutes or until edges are golden brown. Top with milk, yogurt and fruit.

Ok, not to hijack the thread or anything, but I just had a weird dream that my mom was at my house(she lives on the other side of the country) and when I woke up she had made a ton of breakfast casseroles!!! :panic They were so delicious!!! Some of them were like little personal sized quiches. :drool

How weird is that?!?!? Must be the pregnancy hormones.

Funny how food can seem so real in dreams, lol.

Speaking of quiche, my sister just made this breakfast quiche/hashbrown casserole and it was soooo good...

3 cups, shredded frozen hash browns, thawed and drained
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
Salt and freshly ground black pepper

Preheat oven to 450 degrees F.
Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.

Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

I make this every Christmas Eve night and refrigerate overnight so all I have to do is pre-heat the oven on Christmas morn, and pop it in.

Christmas Morning Casserole

Ingredients:
8 slices sourdough bread, crusts trimmed
8 slices canadian bacon or ham
8 slices sharp cheddar cheese
3 eggs
1/4 cup minced onion
1/4 cup finely chopped bell pepper
2 teaspoons Worcestershire sauce
1-1/2 cups of milk
smidge each of salt, pepper and dry mustard
dash of Tabasco sauce

Topping:
1/4 cup butter, melted
1/2 cup crushed cornflakes

In a greased 9x13 inch glass baking dish, place 8 slices of bread in one layer. Top bread with slices of bacon or ham and follow with a layer of cheese. In a bowl, beat eggs with salt, pepper, and dry mustard. Add onion, bell pepper, Worcestershire sauce, milk and Tabasco; pour over bread mixture. Cover and refrigerate overnight. Next day, preheat oven to 350. For topping, melt butter and pour over casserole. Top with a layer of crushed cornflakes. Bake uncovered for 1 hour.

I can't wait to try one of the hashbrown recipes...sounds Yummy! :thumb
