Chuckwagon Casserole and corn. Here is the recipe.
Chuckwagon Casserole
1/2 cup chopped onion
1/2 cup chopped green pepper
1 lb ground beef
1 pkg corn muffin mix
1 can mild chili beans
3/4 cup barbeque sauce
1/2 tsp salt
1 can Mexican style corn, drained
Preheat oven to 400 degrees. Chop onion and pepper. Cook beef, onion, and pepper until meat is no longer pink. Drain. Stir in beans, barbeque sauce, and salt. Bring to a boil and simmer 10 min. Spoon into a greased 9 inch square baking dish. Meanwhile, prepare corn muffin mix according to pkg directions. Stir in corn. Spoon over meat mixture. Bake 30 min.

Organic barbecue chicken on the grill with sweet corn, grilled onions and garlic with olive oil and spices, and fresh grilled zuchinni from our garden.
We don't eat sweets, but our neighbor just brought over fresh, hot chocolate chip cookies from her oven, so we might have to break the rules tonight!:nod
