I love gumbo and haven't had it for a long time...the spicier, the better. :drool
I add extra red pepper to mine at the end. Last night dh said "this is hhhooootttt". I start with a box of Zatarain's Gumbo mix and six cups of water. Simmer for 10 minutes. Add 1/2 package of sliced frozen okra and a can of diced tomatoes. Simmer 10 more minutes and add a bag of frozen pre-cooked, deveined, tailess shrimp. Simmer for three minutes.

That gumbo sounds delicious! I actually cheat a little with the Chicken Parm. I buy pre-breaded chicken patties, bake them in the oven (according to package directions), cover them with my favorite spaghetti/tomato sauce, grated Parmesan, and shredded mozzarella; then, I place them back in the oven to let the cheese melt.

Okay, who's going to ask me to dinner? First I read Tall Timbers and think that sounds so good. I haven't had prime rib in ages. Then next comes Cali with the chocolate pudding pie tarts. This is killing me. Then the killing blow was Marie with Chicken Parmesan :ohno
We're having left over gumbo:rolleyes. I know I must remember Ephesians 5:20.
You're welcome to join our table. I just took it out of the oven, but it will need to set for an hour and a half before I slice it up on account of I need to go get one of the boys... So if you have a private jet you might be able to make it. This was a big piece of meat, so we've got enough extra for several hearty appetites.

Seems like chicken is a staple at our house since we don't eat beef - or so rarely it seems like never:sad
