Sounds delicious, but a fat and cholesterol bomb. :panic.
Cholesterol (C) was never the bad guy. Research has been finding that people with "good" C and "bad" C are about a 50-50 spread, meaning just as many people die from "good" C as from "bad" C.
The REAL problem is homocysteine
What Is Homocysteine?
Homocysteine is an amino acid in the blood. Epidemiological studies have shown that too much homocysteine in the blood (plasma) is related to a higher risk of coronary heart disease, stroke and peripheral vascular disease.
Other evidence suggests that homocysteine may have an effect on atherosclerosis by damaging the inner lining of arteries and promoting blood clots. However, a direct causal link hasn’t been established.
Plasma homocysteine levels are strongly influenced by diet, as well as by genetic factors. The dietary components with the greatest effects are folic acid and vitamins B6 and B12. Folic acid and other B vitamins help break down homocysteine in the body. Several studies have found that higher blood levels of B vitamins are related, at least partly, to lower concentrations of homocysteine. Other recent evidence shows that low blood levels of folic acid are linked with a higher risk of fatal coronary heart disease and stroke.

The greatest irony of cholesterol-lowering drugs is that they are actually INCREASING your chance of dying from heart disease, as they rob your body of vital Co-Q10. In fact, for the statins family of C-lowering drugs, the pharmaceutical companies are quietly including Co-Q10 in their formulations.
So, enjoy the macaroni and cheese with an entire stick of butter!

Try a box of standard Kraft macaroni and cheese, but with a whole stick of butter.

Tonight I plan on making Spaghetti. I will also serve a salad and Italian bread. Dessert will be mixed berries (blueberries, strawberries, red raspberries and blackberries with some red seedless grapes) topped with a dollop of Cool Whip. I'm really trying to offer up some more healthy fare for all our meals, hence the dessert choice.

herbed rotisserie chicken, steamed spring veggies and risotto
the risotto was made in my Fagor 3in1 pot. its a pressure cooker, rice cooker and slow cooker all rolled into one. i am having so much fun using it. risotto is a chore to make normally (and i don't have that much patience or standing ability), but the pot makes it in 10 minutes, no stirring and brothing. sautee the onions in the pot then add the broth, wine etc, put it on high pressure for 10 minutes.... beeps when its done, throw in the parmesan cheese and some fresh parsley.... viola!
and the chicken is done in the rotisserie oven, that is a no-brainer too. no peeking, poking or anything.
:yeahyeah, i get all giddy over my kitchen gadgets :aha
