hubby and I had a big salad and the kids had leftover pulled pork sandwiches... except the oldest who had frozen waffles......

We ate out for lunch today. Mexican food about 3 so tonight we are having pie and ice cream for supper.

Some of you may already visit www.allrecipes.com Their site has helped me 'last minute' lots of times, like yesterday when dh brought in some ground beef for me to use for dinner. I went to their site and found Beef & Cheese Enchiladas, which uses cottage cheese (I had some that was needing to be used up). The meat sauce made so much that I saved some of it in refrigerator to serve as chili with Fritos today for Sunday evening meal. The rest of the enchiladas will be served for Monday's dinner. I like recipes that make 'a lot' and allow me to get more than one day's dinner from them, since cooking isn't my favorite past time. :heh

I have not made the casserole before.. pray it turns out all right..LOL
