lol Sophie :) I had to look it up too... it's a bean & meat stew (usually pork, but there are other recipes)... It sounds wonderful, but I'd go for a beef version - this may sound crazy but hubby has difficulty with pork, it gives him a hot temper - really! All of a sudden he's cursing at things... so I don't feed him pork :D
Here's a lengthy description and recipe for cassoulet: http://www.foodandwine.com/recipes/toulouse-style-cassoulet
Tonight we're having leftover chicken picatta, which is just glorious and pretty easy to make. It has capers in it... first time I tried it I thought "ew capers look like baby snails"... but I looked last night and my plate was clean, so they must not be crunchy, lol.... actually they're brined flower tops....
Simple version of a bean and chicken casserole. I used chicken sausage, chicken tenders, chopped onion, garlic, tomato sauce, 1 c. white wine, and 3 can white kidney beans. topped with panko bread crumbs and butter. Bake.
It was divine!!!! I had it over the weekend when we were out of town and thought to try it. Some of the recipes called for duck, bacon, etc. But, I went for the simple, since I had all of the ingredients on hand.
