Black bean tacos, hot carrots, and left over chicken cornbread/squash stuffing.

We just had cheeseburgers and french fries tonight. Last night, I made a new recipe in my crockpot that was SOOOO good! It was so easy. If you can open a couple of cans, you can make this. It's also low fat. Here is the recipe.

Mexican Chicken

2 cans corn, drained
1 can black beans, drained
1 jar salsa
4-5 frozen boneless skinless chicken breasts
1 cup shredded cheddar cheese

Put corn and black beans in crockpot. Add 1 cup of salsa and mix. Put frozen chicken breasts on top. Pour rest of jar of salsa over chicken. Cook all day on low 8-9 hrs. Last 5 minutes of cooking, put shredded cheese over chicken to melt. Serve over rice.
