I picked up a bulb of elephant garlic today. I have some ideas how to use it in a meal but I am open to suggestions from someone with a good recipe.

You may decide my supper tomorrow night.

Youngest daughter and her hubby invited me out. We went to Swiss Chalet. I had the 1/3 or a rack of bbq ribs, smashed potatoes and gravey and cole slaw, and whole wheat bun.
I iz a lucky ole' lady.

Not cooking tonight. It's DH's birthday so the family is going to Cheesecake Facotory.

I like to roast whole garlic cloves with quartered little new potatoes with olive oil. I leave the skins on the garlic cloves (but you don't have to) and cut off the tough ends of the cloves. I usually put the garlic
in the oven with the potatoes about 15 minutes before the potatoes are done. That way the garlic doesn't get burned. It makes the garlic nice and soft and yummy. You just squeeze the garlic out with a fork and eat it with the potatoes. Delicious if you like garlic.
