We're having grilled salmon and something. I'm just sitting here hunting through recipes for something different.
Anybody have any good ideas of what to do with zucchini? I have never cooked it much other than a stir-fry and I'm just baffled with it. I don't like a lot of tomatoes and a lot of the recipes I see call for tomatoes.

My girlfriend makes these sweet potato brownies and said that zucchini could be substituted for the potatoes. I haven't had it, but the others said it was very good.

I am headed to the store for bacon. My girlfriend was telling me about her bacon stip and peanut butter sandwiches. That is what we are having..on toasted Texas toast!

I cleaned and cooked two nice bunches of Kale with New Potatos in Chicken Stock with onions and seasonings. It really came out quite good.
I do like my vegiies :thumb

We had cooked swiss chard from Dh's garden. We've had all kinds of greens before but not these particular greens. We also had Cashew Chicken which Dh and our son really liked but I wasn't too crazy about it as I don't care for sweet/sour sauce.

What is Mennonite cabbage borscht.
Soup made from a ham bone and left over ham, potatoes, cabbage, onions, garlic, lots of dill weed, salt and pepper, bay leaf, and when veggies are done throw in some nice minced tomatoes. Serve with sour cream. My mother-in-law and father-in-law were mennonite. I learnt how to make the borscht from her. My kids grew up eating this soup quite regularly. A real hearty meal in winter and served with johnnycake was wonderful. :yeah:yeah

Has anyone ever made Butternut Squash Chowder? We had some last night at a wedding that was delicious. It was called Roasted Corn and Butternut Squash Chowder with Green Chilies and Cinnamon. I'm going to try to find the recipe for it.

That sounds like a wonderful and healthy and hearty soup. Do you ever put beets in it?

I thought that sounded good too so I looked.
This one sounds like it would be good with the addition of the squash and they had some other soups like pumpkin.
