This is a fun thread that we had on the other board. What are you all having for dinner tonight? We had taco bar (Baked potatoes topped with leftover taco meat, cheese, lettuce, tomato, onion, salsa, and sour cream).Easy fish stew. These numbers- use 1/2 gallon pot- serves 3 or 4 healthy bowls. I use frozen already cooked salmon patties. Can also be cans of mackeral or other fish.
microwave (4) frozen salmon patties on high 4 minutes. In pot WARM, not hot (1) can italian stewed tomatoes and (1) can white beans. Crumble up and add salmon patties. Stir often. Add 1/4 cup olive oil (or 1/2 stick butter-oil healthier). Season with oregano and garlic and pepper to taste. (spash lemon juice optional). NO SALT- enough in ingredients. Great with sour dough bread dipped in olive oil/pepper. Yummy!:heh
