Homemade split yellow pea and ham soup simmered with lots of carrots, onion and celery, and sour dough bread.
Tonite we're having ham shank and potatoes.... I'll be doing the homemade pea soup tomorrow, Lord willing! :drool

Well, last night it was whatever variety of Hamburger Helper that is Mexicanish. Cheesy Enchilada? I don't know. It was okay. Tonight...haven't thought that far ahead!

Beef enchiladas with fresh cabbage, cucumber, and avocado as sides. Fresh cut lime to squeeze on everything.
