My niece is getting married this afternoon. I'll be having dinner at the reception and I don't know what will be seved. I do know that I am about to have oatmeal for breakfast though.

Four sweet italian sausages removed from their casings. I use chicken sausages and add a tablespoon of rendered bacon fat to cook them in. If you use pork sausages Id leave out the bacon fat and drain off the excess fat. Break them up into smallish bite-sized pieces while they are cooking.
Once the sausages are almost done cooking add 1 large onion. 'French' it (long thin strips) if you know how. If not, then just do a fine chop. Add to the almost cooked sausages. Add a large minced clove of garlic too.
Once the onions are translucent add two quarts of chicken stock. Bring to a simmer. Add about five cups of whole milk, or four cups milk and one of light cream. Bring back to a simmer.
Slice about six russet potatoes into quarter inch 'chips'. Leave the skin on. Add to the pot.
Add some red pepper flakes to taste. Start with half a teaspoon. You can always add more if it isnt spicy enough.
Adjust the seasoning at this point. It is needs more salt add one or two chicken boullion cubes.
Thoroughly wash about a quarter of a bunch of kale, about six leaves. Remove the stalks and give a rough chop. Add to the pot when the potatoes are tender. Turn off the heat. The kale will cook enough with only the residual heat in the pot.
Put on some Dean Martin music and enjoy!
