Have you ever tried making Tortilla de Patata?
It's a Spanish dish usually served as lunch, dinner or "tapas" (small snack sized meals) - you dice potatoes and then fry them, same with onion and garlic (I have to make mine without the last two due to how my gut reacts to them) and once you have sufficiently drained the veggies, you use 3 eggs per cup (or so - add a little more if the ratio is off) and cook on each side.
To flip it efficiently, make sure that it has cooked well on the side it is on, and carefully slide it with a spatula from the pan onto a plate and 'flip' it back into the pan for more cooking.
You shouldn't have to add more than a Tbs of oil into the pan for an entire tortilla to cook.
It makes a large omlette that you can eat with ketchup, and is often served in the part of Spain we lived with sliced tomatoes that have been salted well.
I love it, and my DH has come to like it also... it comes in real handy when you haven't much in the pantry and have eggs and potatoes ;)
