Here is a little idea I came up with when faced with the end of the month and waiting til payday to get to the grocer.
It's My own concoction I call "Poor Man's Breakfast"
Depending on family size adjust ingredients at your will.
Eggs
Diced Onions
Cheese
Bologna
First fry the bologna just till edges start to get that crisp brown edge
Remove from skillet and slice in strips or chunks
Add some oil/butter to your skillet
Add beat up eggs
Add onions
Scramble your eggs as you normally would and then when they are about done add your cut up fried bologna and cheese and continue cooking until cheese starts melting. Good alone or with toast and juice.
Then serve up.
It went over well in our house...hope you like it.:wave

I've done something almost identical to this, except no bologna. You can use any veggie that you like - green peppers or broccoli are good. I call it a scramblet (scrambled eggs/omelette). The onions would be really tasty in there, too!

we've done something similar here too.
but that sounds pretty good!
what i have done is fry the bologna and then top it with an egg over-easy then slap on some cheese, if the cheese isn't going to melt well i throw it under the broiler for a few seconds...
hubby's mom used to fill the bologna with mashed potatoes then top with cheese
eggs are great cheap protein i usually keep at least 2 dozen in the fridge
i have fried eggs a lot at night when i get home from work late :)

Yep, they're cheap, easy, fast, and filling - sometimes only eggs and toast will do it.

Now, I'm okay with regular lunchmeat bologna, but not ring bologna. I have no idea why, but the sight of someone eating it just makes me want to gag!

I haven't had Spam in years. I used to like it, though. My step-dad loves it fried.
