I thought I saw a thread asking for recipes. But I could not find it so here is another one.
So if you have some great recipes, please share them in this thread.
Spinach With Garlic and Pine Nuts
I'll start with one or two.
Makes 2 (3/4-cup) servings
Description
When shopping for spinach, choose the thicker, shinier spinach leaves for sautéing. The flat, more delicate spinach is better for eating raw.
Prep time: 10 minutes
Start to finish: 8 minutes
Ingredients
1/2 pound spinach leaves, tough stems removed (3 1/2 to 4 cups loosely packed)
1/2 tablespoon extra-virgin olive oil
1 tablespoon pine nuts
1 garlic clove, sliced
Salt and freshly ground black pepper
Instructions
1. Wash spinach and spin dry, leaving some droplets of water on leaves.
2. Heat oil in a large skillet over medium heat. Add pine nuts and cook, stirring frequently, until lightly golden, about 3 minutes. Add garlic and cook 1 minute more.
3. Add spinach to the pan, in batches if necessary, and sauté until starting to wilt, 30 seconds. Cook, stirring and tossing frequently, until all spinach is wilted and liquid is absorbed, about 3 minutes. Season with salt and pepper and serve.

Almond-Crusted Chicken Fingers
EASY TO DO.
Canola oil cooking spray
1/2 cup sliced almonds
1/4 cup whole-wheat flour
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 1/2 teaspoons extra-virgin olive oil
4 egg whites (see Ingredient note)
1 pound chicken tenders
1. Preheat oven to 475°F. Set a wire rack on a foil-lined baking sheet and coat with cooking spray.
2. Place almonds, flour, paprika, garlic powder, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the paprika is mixed throughout, about 1 minute. With the motor running, drizzle in oil; process until combined. Transfer the mixture to a shallow dish.
3. Whisk egg whites in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the almond mixture; turn to coat evenly. (Discard any remaining egg white and almond mixture.) Place the tenders on the prepared rack and coat with cooking spray; turn and spray the other side.
4. Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20 to 25 minutes.
NUTRITION INFORMATION: Per serving: 147 calories; 4 g fat (1 g sat, 3 g mono); 49 mg cholesterol; 4 g carbohydrate; 21 g protein; 1 g fiber; 214 mg sodium; 79 mg potassium.

TIP: Ingredient note: Dried egg whites are convenient in recipes like this one because you don't have to figure out what to do with 4 egg yolks. Look for powdered brands like Just Whites in the baking aisle or natural-foods section or fresh pasteurized whites in the dairy case of most supermarkets.

I love peanutbutter balls -- but i can't find my recipe right now... Need help here ladies.. They are SO good!

Ok time to build my recipes up for the winter.Ineed some good easy dishes to make, I am going to disney for 2 week sin dec. And taking my Crock Pot with me so Ican put stuff on in the Morning and come back tothe house to dinner.
make'um easy (cheap) and good. has to feed 8-10

This is the recipe I use::
2/3 bar of Paraseal wax (I personally do not use this)
6 ounce pkg of chocolate chips
1 stick of butter
2 cups of smooth or chunky peanut butter
1 pound box of powdered sugar
4 cups of rice cereal (I use Rice Krispies)
Melt butter. Mix all ingredients in mixing bowl including melted butter. Form into balls. Melt chocolate.( If using wax melt it first then add chocolate and finish melting the wax and chocolate together)Dip the balls in chocolate and set on parchament paper to set. (I use miniature paper muffin cups for less mess and easier storage) I keep mine in the refridgerator.
I do not know if this is the same as yours but we think they are really good and it makes A LOT. :)

I think it was is so the chocolate won't melt as easy in your hands :idunno. I'm not really sure and I could never find that exact thing in the store so I never used it.

An old standard is a cut of beef cut into portions, add a can or two of mushroom soup and garlic powder and let it go. You can also add worceshire sauce if you want a beefier flavor. Serve with rice or mashed potatoes and some veggies.
You can also use this for pork chops.
Then there's also a beef stew. You can braise the beef first if you'd like (brown it in oil before putting in the crockpot).
cut up potatos and veggies throw it all in the crockpot with the meat and a package of onion soup, and some water or tomato sauce or beef broth and let it go.
Chili - brown the meat first with onions and garlic, toss in crockpot with tomato sauce and chili seasonings and whatever else you like in chili. I use water chestnuts to give some crunch. cooking all day gives you great flavor from the seasonings. Serve with cornbread or fritos and sour cream and chives and shredded cheese for toppings.
That's the great thing about crockpot stuff, you can just toss it all in and leave it!
Im pretty sure you can make spaghetti, but Im not sure how it works with the noodles.
