I noticed on Racheal's recipe thread where a few people were looking for crock pot recipes. Most of the ones I'll be posting are from Fix It and Forget It Cookbook - Feasting with your Slow Cooker.

It's cold out today, and I woke up with a cold, so this looks like a good one to start with. :)

Chicken Noodle Soup
Makes 6-8 servings

5 cups hot water
2 Tbsp. chicken bouillon granules or 2 chicken bouillon cubes
46-oz. can chicken broth
2 cups cooked chicken
1 tsp. salt
4 cups "homestyle" noodles, uncooked
1/3 cup thinly sliced celery, lightly precooked in microwave or stovetop
1/3 cup shredded, or chopped, carrots


1. Dissolve bouillon in water. Pour into slow cooker.
2. Add remaining ingredients. Mix well.
3. Cover. Cook on Low 4-6 hours.

Au Gratin Potatoes and Ham
Makes 6-8 servings


10 potatoes, thinly sliced
1 onion, chopped
2 Tbsp. flour
1/4 tsp. pepper, optional
1/2 lb. Velveeta cheese, cubed
1/2 cup milk
1/2-1 cup fully cooked ham, or sliced hot dogs


1. Combine all ingredients in slow cooker.
2. Cover. Cook on Low 7-8 hours.

Family Favorite Casserole
Makes 6-8 servings


1 1/2 lbs. ground beef
1 onion, chopped
1 1/2 cups diced potatoes
1 1/2 cups sliced carrots
1 1/2 cups peas
1 1/2 cups macaroni, cooked
10 3/4-oz. can cream of celery soup
1/2 lb. cheddar cheese, grated
2 cups milk
1 1/2 tsp. salt


1. Fry beef and onion in saucepan until brown. Drain.
2. Cook vegetables just until soft.
3. Combine all ingredients in slow cooker.
4. Cover. Cook on Hight 2 hours, or Low 4-5 hours.

Variation:
Skip pre-cooking the vegetables; add them raw to the slow cooker. Increase cooking time to 4 hours on High, or 8-10 hours on Low. Add the cooked macaroni and the milk during the last 15 minutes if cooking on High, or during the last 30 minutes if cooking on Low.

Chicken Cacciatore
Makes 6 servings


2 onions, thinly sliced
4 boneless chicken breasts, cubed
3 garlic cloves, minced
1/4 tsp. pepper
2 tsp. dried oregano
1 tsp. dried basil
1 bay leaf
2 15-oz. cans diced tomatoes
8-oz. can tomato sauce
4-oz. can sliced mushrooms


1. Place onions in bottom of slow cooker. Add remaining ingredients.
2. Cover. Cook on Low 8 hours.
3. Serve over hot spaghetti.

Tuna Noodle Casserole
Makes 6 servings


2 6 1/2-oz. cans water packed tuna, drained
2 10 1/2-oz. cans cream of mushroom soup
1 cup milk
2 Tbsp. dried parsley
10-oz. pkg. frozen mixed vegetables, thawed
10-oz. pkg. noodles, cooked and drained
1/2 cup toasted sliced almonds


1. Combine tuna, soup, milk, parsley, and vegetables. Fold in noodles. Pour into greased slow cooker. Top with almonds.
2. Cover. Cook on Low 7-9 hours, or High 3-4 hours.

Meatloaf Sensation
Makes 8 servings


2 1/2 lbs. ground beef
half of an 8-oz. jar salsa
1 pkg. dry taco seasoning, divided
1 egg, slightly beaten
1 cup bread crumbs
12-oz. pkg. shredded Mexican-mix cheese
2 tsp. salt
1/2 tsp. pepper


1. Combine all ingredients, except half of taco seasoning. Mix well. Shape into loaf and place in slow cooker. Sprinkle with remaining taco seasoning.
2. Cover. Cook on Low 8-10 hours.

Pirate Stew
Makes 4-6 servings


3/4 cup sliced onion
1 lb. ground beef
1/4 cup uncooked, long grain rice
3 cups diced raw potatoes
1 cup diced celery
2 cups canned kidney beans, drained
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. chili powder
1/4 tsp. Worcestershire sauce
1 cup tomato sauce
1/2 cup water


1. Brown onions and ground beef in skillet. Drain.
2. Layer ingredients in slow cooker in order given.
3. Cover. Cook on Low 6 hours, or until potatoes and rice are cooked.

Variation:
Add a layer of 2 cups sliced carrots between potatoes and celery.

Thanks so much for posting these! :thumb I've got to start using my crock pot more often. There just aren't enough hours in the day to get things done in the way I'm doing things now.

I found one of the day by day calenders that was fix it and forget it. A crock pot recipe a day.. sound like my kind of cookbook

Our favorite is super easy:

a whole chicken.
chicken stock 1 cup
veggies
a few cloves of garlic
