Anyone have any good recipes for gingerbread? Gingerbread for cookies, gingerbread men, gingerbread houses, etc...? Anyone do anything really creative with gingerbread?
Hmmm....:thinking I wonder how gingerbread got started being connected with Christmas...

Brown Bear in the Apple Orchard
1 Big jar of apple sauce (plain or spiced)
1 box of simple gingerbread mix
Its easy, basically you are making gingerbread dumplings, cooked in applesauce.
Dump the apple sauce in a medium sized pot, bring to a simmer (careful, bubbling apple sauce is meaner than tomato sauce) Follow gingerbread cake instructions on back of its box to make the batter, drop gingerbread batter into the applesauce in dollops, spacing them out a bit, but don't worry too much. simmer uncovered for a bit (i'm thinking 10 minutes or so) Then cover and continue to simmer till the gingerbread 'looks' done,\.
take off the heat and allow to cool at LEAST 10 minutes, it stays hot for a long time so be very careful serving to kiddos.
i have never really had a set in stone recipe for this, but its really simple, just keep the heat up enough to cook the dumpling, but not burn the sauce.

Icebear, that is definitely different, sounds good! Is it a very "sweet" type of dessert (do you serve it as a dessert)?

it makes a great dessert, if you use unsweetend applesauce, its more tart... its an excellent tummy warmer on a cold snowy day :)

It does sound like something that would be very warming, without being too sweet, esp. with cinnamon in the apple sauce! Thanks for the recipe! :thumb
Anyone have any others? Any that you can decorate and/or build stuff out of? lol

I found this one by Scott Adams at Celiac.com
These are REALLY awesome
Ginger Cookies #3 (Gluten-Free)
2¼ cup rice flour
1 teaspoon cinnamon
2 teaspoons gluten-free baking soda
¾ cup gluten-free shortening
¼ teaspoon salt
1 cup brown sugar
½ teaspoon cloves
1 egg
1 teaspoon ginger
¼ cup molasses
Sift together dry ingredients except sugar. Cream shortening with brown sugar, add egg, and molasses. Add dry ingredients and mix. Chill dough in refrigerator for 30 minutes. Roll into small balls, dip the top in white sugar, and flatten with fork on greased cookie sheet. Bake at 375F about 8 to 10 minutes.
And by really awesome, I mean they have a certain 'bite' to them at the end, but are really good as far as a day you need the extra vitamins, this has it.

Thanks! I like my ginger snaps, cookies, etc.. to have a bit of bite to them! :nod
I had some store bought cookies recently from England that had lemon cream in between two ginger cookies, really liked those as well.

I have a great recipe for some spicy drop cookies that I just love, and I can't find it anywhere!
