Wow, that is awesome. Now, if I had the extra hands, space and spacious kitchen with supplies.... I think I could maybe do that.. LOL

Aw you just quadzuple everytyhing... :lol2 I catered senior prom for 600 kids- 4 yrs in a row ~ color me stooopid. :panic That wasn't that bad- it was appetizers, finger foods, cookies, etc. Fun easy stuff...
But I have done buffet dinners for just over 200 (with help of course) several times. The worst was 80# of prime ribs roasting and my dear (ex)father-in-law who was "helping" thought because he heard pan drippings sizzling, it was too high of a temp. So thinking he was turning down one of the 2 ovens, he turned it OFF. I almost had a stroke. :shocked
I discovered it like 20 minutes before time to serve when pulling the roasts out of the oven to set! I cranked those 2 roasts up full bore and proceeded to serve the other 2 first. Luckily alot of people prefer medium rare - because we had ALOT of that. Another time he thought the chicken roasters were set too low and he turned them up and burned several pieces of chicken for a wedding reception. Again, luckily there were other meats and we had just enough good pieces of chicken left to serve.
Just plan for disasters and it's actually alot of fun. Never had an occasion not turn out just great. :)
