I need help for a menu suggestion to go with red curry chicken and rice. I need some kind of side dish. I don't want to do a tossed salad because I'm doing that the next night with chicken enchiladas. (Having company for two weeks :) :panic). My chicken enchiladas and red curry chicken are my two best recipes but I have a difficult time with side dishes. Help.

MsSophie, the website that I rely on most for recipes is www.allrecipes.com/Recipes/Main.aspx They even suggest side dishes when you find a particular recipe on their site. If you look up one of your main course dishes (even though you already have a recipe), there might be a suggestion or two that would help to get you thinking. There are also reviews of each recipe to help you see what adjustments to the recipe someone else found to be helpful.

That sounds wonderful to me too. There's only one problem with that. My sister who is the visitor the first week can't stand peas :idunno. Wow, I wish she liked peas (at least I wish she didn't hate them :heh). I just love that idea.

Lynn I went to that website and found similar dishes to the red curry chicken but I couldn't find on the page where menu suggestions were listed.

You're right, MsSophie. I apologize. Must have it confused with another website, but the allrecipes.com does have a left side bar with 'Side Dishes" where you can click. Maybe something will be on there that will sound good to you. This is a very helpful web site that I use for everything, and I hope that it is helpful to you as well. :)

I think roasted broccoli would work well with that dish. The broccoli develops such a sweet, nutty flavor when cooked this way.

Here's how I make mine:

1. Place some broccoli florets on a metal baking sheet or roasting pan.

2. Sprinkle on 1 1/2 teaspoons salt, 1 teaspoon garlic powder, and 1/2 teaspoon crushed red pepper flakes.

3. Drizzle some olive oil or vegetable oil (about 2 tablespoons) over the broccoli to coat.

4. Bake at 425 degrees F for 20-30 minutes, depending on the texture you like (shorter for crisper broccoli, longer for softer broccoli).

Red Chicken Curry

2 tablespoons red curry paste
3 tablespoons olive oil
1 pound boneless chicken breasts or thighs (I use breasts)
1/2 bunch fresh basil
1/2 bunch cilantro
17 ounces coconut milk (found in cans)
2 tablespoons soy sauce
salt and pepper

1. Cut chicken into half-inch strips. Chop the basil and cilantro, set aside.

2. In a large pan, over medium heat, combined the olive oil and curry paste. Add the chicken and stir frequently until brown. (I use a large skillet which has a glass cover).

3. Add the basil, cilantro, coconut milk and soy sauce to the pan. Season with salt and pepper. Stir to combine and bring to a simmer. Cover with lid and allow to simmer for 30 minutes.

4. Serve with rice and garnish with additional cilantro if desired.

Serves 3 to 4.
