View Full Version : Candied Fruit.....recipe for?

I once saw in an old Martha Stewart magazine, whole candied fruit. this wasn't quite the same stuff you find chopped up in little plastic tubs for making fruitcake.... what was displayed in the magazine (the way only Martha can) was this gorgeous assortment of whole candied fruit. Whole pineapples, whole plums and apricots, pears, figs etc.... It looked so yummy and impressive. I have been trying to find out how to try making the stuff for myself for years, about 6 years. The magazine was missing many pages (i had gotten it from the toss pile at the library) so if instructions were given, they were gone. The only info in what pages there were was describing the pineapple, something like this: "A whole candied pineapple preserved in sugar which requires many weeks of soaking in sugar solution"

Any time i try to look up "candied fruit" i get either fruitcake stuff or the sugared fruit that you paint with egg white and roll in superfine sugar. I have learned that the process i am looking for is also called masceration, or maceration.... but i can find no recipes :( allrecipe.com just stares back at me blankly.

Can anyone help?

have you tried martha's site? You may be able to email them for the info. Sounds interesting

Ok-- I found it I cannot post the link for some reason.. so go to marthastewart.com and type in candied fruit and they have the technical name for it. It is a start

i had tried that site for the last time about six months ago, maybe i should have tried just one more time.... or i was checking in the wrong season....

there are no instructions but the term "fruit confit" may give me more leads....

i spent the bettert part of the other evening looking and searching... the closest thing i found was an interview with a french chef describing in basic terms how the fruit is prepared. the article was intended to help english language students learn french, so it wasn't focusing on the same info i wanted...

i'm gonna have to write a letter to someone.... MArtha Stewart Magazine, Bon Apetite mag, maybe food network tv..... :gaah
