That would be asking about His 41st day I presume. He probably was tied to Mary as they trekked away towards a different country and out of the danger that was lurking in His own land for Him. He probably laughed, cried, made sounds, and fed.

40 days after His birth or 40 days after His resurrection?

Do you mean for the forty days between His resurrection and ascension? The text isn't clear - there are a few incidents told to us in the text, and in Paul's letters (mainly 1 Corinthians 15). As far as a general statement as to what He was up to during that time, I think the most we can say is that he appeared to some or all of His followers at various times and ate and spoke with them. Beyond that, the text doesn't tell us much.

Yes, it was Pentecost, which was a Jewish holiday wherein the giving of the Torah at Mt. Sinai was celebrated.

Precisely. And, shortly thereafter, the "law" of the New Covenant being given to the followers of the Messiah.

I've never before run across the idea that the ascension took place on the day of Pentecost.
Could you elaborate on this in Acts 1?
