View Full Version : SIMPLY DELICIOUS EASY BEAN/PASTA Soup

We sometimes leave out the pasta and its then just bean soup but leaving out the pasta does not affect the flavor and its one less time consuming step in an otherwise extremely simple recipe.

Pasta e Fagioli

1 pound ground beef (use 2 lbs if family likes meat)
1 small onion, diced (1 cup)
1 large carrot, julienned (1 cup)
3 stalks celery, chopped (1 cup)
2 cloves garlic, minced
2 14.5-ounce cans diced tomatoes
1 15-ounce can red kidney beans (with liquid)
1 15-ounce can great northern beans (with liquid)
1 15-ounce can tomato sauce
1 12-ounce can V-8 juice
1 tablespoon white vinegar
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 pound (1/2 pkg.) ditali pasta

1. Brown the ground beef in a large saucepan or pot over medium heat.
Drain off most of the fat.
2. Add onion, carrot, celery and garlic and sauté for 10 minutes.
3. Add remaining ingredients, except pasta, and simmer for 1 hour.
4. About 50 minutes into simmer time, cook the pasta in 1 1/2 to 2 quarts of boiling water over high heat. Cook for 10 minutes or just until pasta is al dente, or slightly tough. Drain.
5. Add the pasta to the large pot of soup. Simmer for 5-10 minutes and serve with Garlic Bread Sticks or French Bread and parmesan cheese.

Serves 8.

This sounds very good, thank you..!

Excuse the spelling..but I think a few Italian soups, like the minestronne variations use pasta and beans together, and I love them myself!

I would love a recipe for a soup I had when I was a teen that my mom's Italian girlfriend made us.

It was one with lentils and kale. anyone???:idunno

Variations on recipe:
1/2 mild Italian sausage and 1/2 ground beef

I add 3 bay leafs to the recipe.

Also you may wish to add Italian Seasoning and/or Oregano.

What's wonderful about this recipe is you can adapt it soooo easily to your taste buds.

I've never had it with kale, but have had it with spinach. I'm sure you could replace the spinach with kale. Here's the recipe:


Lentil-Spinach Soup

1 cup lentils
6 1/2 cups chicken, beef, or vegetable stock (low-sodium)
1 tablespoon fresh lemon juice
1 lb. (around 4 cups) chopped spinach
1 large onion, chopped
2 cloves garlic, minced
1 celery stalk, chopped
1 large carrot, chopped
1 can (28 oz.) diced stewed tomatoes
2 tbsp. chopped parsley
1/4 tsp. ground thyme
1 bay leaf
1/2 teaspoon salt
1 teaspoon black pepper
1/3 cup grated parmesan cheese
Olive oil

Place lentils in heavy pot, cover with water and cook for 30-45 minutes.

While lentils are cooking, place 2 tablespoons of olive oil in a soup pot or dutch oven and saute onion, garlic, celery, and carrot over medium heat for 5-7 minutes, stirring frequently; add all other ingredients and stir to blend.

Allow soup to come to a boil, reduce heat to medium-low and simmer (covered) for 25 minutes, stirring frequently.

When lentils are done, add them to the soup, take out bay leaf and simmer for another 10 minutes.


*Note: You could even add some rice, pasta, meat (hamburger, diced chicken, Italian sausage) to this to make it more hearty.

Tenn-- I made your recipe.. delicious and I have TONS of it. I must have put in too many noodles and I also kinda chopped up one whole BUNCH of carrrots.
I think it'll last through the millenium! :pound
