i want to make the pickle stuffed meatloaf, but it needs 2 eggs... per 2# of beef.
i only have one :(
is there any cookin subbidude for eggs that will work in meatloaf?

The egg is really just a binder so one should do it. Just cut back on the liquid you use in the loaf.
However, someone better cook than me might have some suggestions.

i'll hopefully get by with the one egg.... there's a rumor going around that hubby's going for groceries on the way from work :)

I looked at that recipe, and it looks really good! Just like what Tenbear said, the egg is what will hold your meat loaf together. You can make due with just one egg, and it will just be flakier and a less solid loaf.
