View Full Version : Baked Bean recipe?

Anyone have a good baked bean recipe? I want to can some so I can stop buying them. I have a family of 6 and refuse to spend much more than $400 a month on food and my kids love baked beans! I want to make them from scratch in large quantities and then can them.

i use Betty Crocker's Boston Baked Beans recipe:

1 pound dry navy or pea beans
1/2 pound salt pork, rind removed
1 med onion quarterd
1/4 c packed brown sugar
3T molasses
1t salt
1/4 t dry mustard
1/8 t pepper

i soak the beans overnight in the fridge then drain, layer the ingredients into the 2 qt pot with enough water to just cover the beans, then bake... the book says 300 degrees F for about 3 1/2 to 4 hours.



i do things a bit different, but based on that recipe. i use 1/2 pound of hicory smoked bacon instead of salt pork (as much meat and as little fat as i can find), 1/3 cup of brown sugar and 5T of molasses, and instead of dry mustard i use prepared mustard- Raye's Stone Ground Sweet and Spicy http://www.rayesmustard.com/ :heh about 2 Tablespoons of that.

thats how i make the recipe "my own"

I also use a small size crock pot and bake the beans in that for somewhere from 8 hours and up.

I also use pinto beans sometimes, they have a different texture, smoother inside and more delicate husks.

yummmmm thank you!! OK so I can do this in my crock pot? I like that idea! Now I just have to find the right processing time. I think I will check out the canning thread. Thank you again and I like how you made it "your own." I am going to try them your way first.

Woohoo!! Do I have a bean recipe for you! We love it and everyone that tries it loves it and its soooo simple:

Aunt Faye's Baked Beans

AUNT FAYE'S BAKED BEANS

1 (1 pound, 15 ounce) can of pork and beans
3/4 cup dark brown sugar
1 teaspoon dry mustard
6 slices bacon, cut into small pieces
1/2 cup ketchup

Partially cook the bacon (do not brown). Mix all ingredients -- beans, sugar,
dry mustard, bacon with drippings, and ketchup into a greased casserole dish.

Bake uncovered in a 325° F oven for 2-1/2 hours.
Yield: 8 servings

This is the original recipe - I add onions chopped finely (we like onions)

I also found that you might need to adjust the cooking time down because they can get overdone - Start checking after one hour and then every 15 minutes until they are the consistency you want.

The bacon is for flavor as is the drippings you can layer bacon over the top if you wish but its really good in the beans as well.

I've never had this fail.

I make mine semi-homemade. I buy canned baked beans (usually Bush's) and add minced onion, brown sugar, a small amount of barbecue sauce, and pickle relish to them. Then I pop them in the oven until they get warm and the flavors blend together (usually at 350 degrees F for around 20-30 minutes).
