I have some pickling spice i'd like to use up, and thought maybe sweet refrigerator pickles would be simple to make... using baby carrots or frozen cauliflower instead of cucumbers...

for this, allrecipes has been no help.

basically i'd love to know if there is a quick rule of thumb for spice/vinegar & water/sugar/salt ratio and "sit" time for different densities of the veggies.

Look for the fresh refrigerator cucumber pickles. Take the ingredients and then just sub the sliced carrots and cauliflower in the amount that is called for in the cucumbers.

(that would be what I would try at least.)

(I have never had this, but you can pickle beets, hard boiled eggs, I think okra and peppers.)

i think i might try pickling some eggs sometime too. both hubby and daughter love boiled eggs. i can only enjoy boiled eggs once they've been devilled. i can't do the plain yolk texture, gotta be dipper eggs or creamy, mixed wth mayo.

i need to find out how long pickled eggs last.... wonder if they'd be good for canning. might make a good protein source/ long term egg storage for those led to stockpile :thinking
