View Full Version : Uh... how do you cook edamame type soybeans?

I bought some "Beer Friend" soybean seeds to try this summer, i looked for cooking instructions but all i can find is "boil in salted water untill done", over and over again on so called recipe sites.

Well, i don't know what "done" is...:tapfoot


how dare they say they have a recipe like that

ok, i'll submit a recipe:

Cake
mix some stuff together untill it looks like cake batter and put it in the oven untill it looks like a cake

I have to tell ya though, you DO cook some rather...."different" things. I've cooked butterbeans in salt water until done. I knew they were done when they were soft, I don't know if your Elly Mae beans are the same. :lol2 Boy...pickle meatloaf and now this. :hug

Here's what I found:

"Boil the pods in the unsalted or salted water for 10 minutes and then shell the beans inside, simply by squeezing beans out of the pods, for eating. This is the Japanese way to enjoy Edamame soybeans, excellent for snacks and appetizers. The cooked or uncooked pods can be stored in the freezer for later uses. In China and other areas, the shelled raw edible soybeans are cooked with meat or mixed with other vegetables for various dishes. Beans are very tasty and delicious."

We love edamame's! My brother got us hooked on them last summer. This year, I bought some non-hybrid seeds to plant my own. We'll see how it goes.

As for cooking them, boil water (enough to cover them) and put them in. It says to boil for about 5 minutes, but it usually takes longer than that. After 5 min, I usually dig one out, pop it open, and try one. They're not to be real soft (as the pods fall apart too easily) and the beans seem to get too squishy. You'll just need to find a softness you are comfortable with. I like ours a little harder, but hubby likes them softer. ?? When they're "done" I put them in a strainer and run warm water over them until the "foamy" stuff is off. Dump salt on 'em and set 'em on the table. The kids love fingerfood, so I leave them in the pods and we each pop our own out of the pods. I've never cooked them in salted water, but will try that next time. There is one brand of edamame's out that is in the frozen section at walmart...you cook them in the bag in the microwave. They just didn't get "done" enough and when I left it in one minute longer than the bag suggested, the bag blew up. :lol2 So we cook them in the pan.

well, the seed company i ordered them from ran out of 'em. so no go for this year. i hoped they would have substituted a different variety, but instead they just took it off the top of the order.... oh well...

i'll try again next season :D
