View Full Version : Mexican Shepherd's Pie

2tbs Olive or Vegetable Oil
4 Chicken Breasts (cubed)
1 envelope Taco Seasoning
1 can (15oz) Black Beans
1 can (14.5oz) Diced Tomatoes (drained)
1 can Mexicorn (drained)
1 Onion (chopped)
1 can Diced Green Chiles (4oz)
1/2 cup Salsa (or small can of Rotel- drained)
2 boxes Cornbread Mix
1 Cup Shredded Cheddar
1 Red Bell Pepper (chopped)


Preheat oven to 350.

Combine cheese, red bell pepper, and cornbread mix (including whatever your mix call for- eggs or milk etc) in a bowl and set aside. Combine all other ingredients (except for chicken, oil and taco seasoning) in 9x13 casserole dish and set aside. Cook chicken in oil until no longer pink in center (do not overcook). Sprinkle taco seasoning over chicken and coat evenly. Stir chicken mixture into the casserole with the other ingredients and smooth out. Top with cornbread mixture. Bake for 30 minutes.

This is a great party dish, and will easily serve 10 (or fewer with leftovers- and the leftovers aren't soggy!). :thumb

is that canned corn kernels w/ mexican type spices?

don't know if i've ever seen that around here... the green canned chiles, yes... but mexicorn, not yet :)

Green Giant makes one, but you could always make your own by taking a can of corn and adding red and green bell peppers to it. :thumb


This really is such a yummy dish. I made it for our family of four and we had PLENTY of non-soggy leftovers. :yay

I think I am going to try this recipe. Only, my husband doesn't like peppers, so I might not use that ingredient. I use green pepper in one dish that I make and he doesn't seem to know the difference except when he spots one.

I'll let you know how it turns out.
