Ok- I had a pound of ground turkey meat and was wondering what to make for dinner, so I kind of made this up. My son ate is all up (and he is VERY picky!) and hubby loved this as well:
I cooked the turkey meat, then put a tortilla on a small skillet. Then I put shredded cheese and the meat inside. I added spanish rice to the kids (the generic rice-a-roni brand). To my hubby and mine, I added green onions and avocado. (We ate the rice on the side) Then I topped with more shredded cheese, another tortilla and flipped when the cheese was melted.
They didn't stay together as well as they could have- maybe next time!
We ate with sour cream! :)
I like to get the spanish rice where you add a can of tomatoes- I always add fresh instead.
I throw stuff together with what I have all the time- and sometimes it works out!
