I know it is the wrong time of year for chili but I have the recipe at hand. This is my pastor's recipe and a favorite in our house...
4 lbs ground beef, 1 large onion, 2 cloves garlic or garlic salt, 1 tsp ground oregano, 1 tsp comino seed, 6 tsp chili powder (more if desired), 2 cans Rotel, salt to taste, 2 cups hot water, and 1 large can tomato juice.
Put chili meat, onion and garlic in large skillet and sear until light colored. Combine meat and rest of ingredients in a stew pot and bring to a boil. Lower heat and simmer for at least 1 hr. Skim fat as it cooks out.
