View Full Version : Guinness Beef Stew

1 can Guinness (or one bottle dark beer)

1-2 pounds beef chunks (cheapest cut)

4 med-lg unpeeled red potatoes

2 lg unpeeled carrots

1 med white onion

1 pound fresh mushrooms

Pour beer into a 5 or 6 qt crockpot & heat on high for a half hour, add salt & pepper.

Add beef & heat for an hour on high, then turn to low.

Chunk potatoes, onion & carrots. Add to crockpot.
Add mushrooms & stir.

sounds very yummy... i bet the potatoes really pick up the dark, roasted grains flavor :D

:drool YUM. I cook with beer a lot, it is wonderful in rich beef soups and as a marinade. I am not a Guiness fan, but maybe Sam Adams or a dark Belgium beer? I will have to try that. :thumb

Any dark beer is fine.

I sometimes use Newcastle or Firestone Double Barrel Ale, but Guinness is my preferred brand.

Have to agree with nana. For some reason I can' handle the taste of alcohol.
