This is hard for me to convey, because I rarely cook with a recipe, but I'll try:

* Boneless skinless chicken breasts (thighs also work well)
* Orange juice
* Spicy brown mustard (like a Gulden's, not the mild yellow)
* Lemon pepper seasoning

Put the chicken in a baking pan (or you can saute it in a pan on the stovetop). Liberally splash with orange juice. Add a very thin coat one side of the chicken with the mustard. Sprinkle with lemon pepper seasoning.

Cook until done in the pan on the stovetop or in a moderate (350F) oven.

Same recipe also works well on shrimp.

Is that orange juice concentrate or is it the actual orange juice?

I have used either straight up orange juice or the concentrate. It is a matter of taste. I would at first try with regular juice because it will give a milder flavor.

Also, I have discovered that when you use this recipe with shrimp, the acid in the juice seems to partially cook the shrimp, so the cooking time is slightly reduced.

Is that orange juice concentrate or is it the actual orange juice?

Sure, sorry I didn't see it sooner -- I keep forgetting that the subscription thread feature doesn't generate an email!

I've been so busy that it really didn't matter. I'm just glad I got an answer. :lol2
