French silk chocolate pie
Serves 8
1 1/2 squares semisweet chocolate, plus extra for garnishing
1 stick butter or margarine, softened
1 1/4 cup powdered sugar
2 eggs
1 teaspoon vanilla
1 baked 9-inch pie shell
Sweetened whipped cream for garnish
1. In a small bowl set over simmering water or in a microwave, melt the chocolate; allow to cool slightly.
2. Meanwhile, cream butter and sugar with an electric mixer on high speed until very light and fluffy. Add chocolate and beat well.
3. Add eggs one at a time, beating well after each. Stir in the vanilla and spread in baked pie shell.
(This recipe calls for raw eggs; to be safe from any salmonella risk, use pasteurized eggs.)
4. Top with sweetened whipped cream around the rim of the filling; shave chocolate with a vegetable peeler to make chocolate curls and sprinkle on top of pie.
