i just "invented" this tonight... all this talk of tomatoes got me craving them :aha

...and i love spinach and had 3# of Hot Italian sausage that needed to be cooked up!

2.5 quarts of water
1 large can spaghetti sauce- i used "meat flavor"
1 large can of stewed tomatoes
3# hot or sweet Italian sausage
3 packs of frozen chopped spinach
1.5 T Italian seasoning
2 T olive oil for frying
1 large onion diced
Fennel seed and garlic to taste
Pepper

Fry up the whole sausage in a big soup pot, mine came in a long continuous rope so i set it flat on the bottom and cranked the heat. cooked it halfway then flipped it. i poured in a quart of cold water, let things cool...took the sausage out and sliced it, put it back in with the chopped onion. Put the rest of the water in, dry seasoning and garlic and simmered for about 20 min... opened the cans of tomato, stewed and sauce. Simmered that for about 20 min. Thawed the spinach and dropped it in gave it about 5 min to cook.

i think it came out pretty good for a throw-together thing.

its Low Carb friendly too.
