View Full Version : Glazed Corned Beef

And it sure is yummy!

* 4 1/2 pounds corned beef, rinsed
* 1 cup water
* 1 cup apricot preserves
* 4 tablespoons brown sugar
* 2 tablespoons soy sauce


DIRECTIONS
Cooking
1. Throw brisket in crock pot and cook until tender.
Glazing
1. Preheat oven to 350 degrees F (175 degrees C).
2. Take brisket and place on Aluminum foil. Fold foil around all 4 sides so only the top is exposed.
3. In a small bowl combine apricot preserves, brown sugar, and soy sauce. Spread the apricot mixture
evenly over the top of the corned beef.
4. Bake uncovered at 350 degrees F (175 degrees C) 25 to 30 more minutes until the glaze become 'marbled.'
You can turn the oven to broil to slightly burn the glaze to make it crunchy.
5. Slice corned beef across grain and serve.
6. Pig out and oh yea...don't forget to invite me!

We are Irish through-and-through. It is so nice to have a corned beef option that doesn't entail cabbage!

I made it last night in the crock pot. It was very good. But, as a side dish I made boiled cabbage...oops....hee hee. We also had biscuits.

It was good!
