My grandmother and mom both made this stuff every year. Of all the Christmas goodies they made, this was the absolute favorite. Even more so than the lefse. And now my kids are loving it.

Boston Cream Candy

6 c. sugar
3 c. whipping cream
2 c. light corn syrup
1/2 to 2 c. chopped walnuts (depending on your tastes_

Combine sugar, cream and syrup. Cook without stirring until a medium hard ball forms in cold water (around 250 degrees). It's sort of a caramel that's gone nougat, and you stop it before it hits hard ball.

Beat it until it's thick and starts losing the glossiness. It'll be just thin enough to get out of the pan. Your arms will ache. Add the nuts and stir one last time. Pour it into a buttered 9x13 pan to cool. It needs to be pretty thin because it's a bear to cut. You generally just break it into pieces.

It's sinful.

Divinity is light and fluffy. This stuff is heavy. Drop the pan on your foot and you'll know it.
