Because even though there are flaws in their theology, they accept Jesus Christ as the Son of God, who was born of a virgin, died on the cross for our sins, and rose on the third day.

We know that believing is not enough, don't we?

Should we apply that to the jehovah's witnesses? They believe everything listed above, except that Jesus died on a torture stake not a cross. While I have to agree with you that catholics do "believe" in Jesus ; the essential is missing. That salvation is attained through Jesus Christ only. Not through works, or good deeds, or the pope. You either go to Heaven or hell when you die; not purgatory. No matter how much money you give to the catholic church you cannot buy your way into heaven or anyone else's ( dead or alive).
Jehovah's witnesses and catholic's alike believe that your good deeds and works are what save you. (although jw's do not use the word save; the idea is the same.)
I am a former jw; my family is italian and very catholic; my pastor and his wife are ex-catholic. I have been around this for most of my life. I am not saying that every single catholic is not saved. I am simply saying that the flaws you mention are major ones. Ones that are misleading millions of people.
Any cult, sect or branch of "christianity" that believes salvation is attained through any way other than through Jesus is not true. That negates God's word the bible; and essentially calls Him a liar.
To clarify; I am not writing this to argue. Just stating what I know from personal experience.
(had to add because for some this is a touchy subject. But we cannot shy away from touchy subjects when it concerns the truth)

Since Catholicism doesn't teach that works get you to heaven or that you can buy your way in, it doesn't fit your definition.
