'have relatives in Natchitoches!
Such a pretty area around the Cane River. The movie Steel Magnolias was set there. Have you ever gone there at Christmas time? It's really decorated nicely and is so pretty. :)

Here's one that I tried from the Near East website (www.neareast.com). It is a brand of couscous that we love to use. This is a great recipe for summer.
BOMBAY SALAD
Curry, apricot jam and tangy lime juice are combined to make the dressing and grilled chicken glaze for this flavorful fruit and couscous salad.
1 package (5.8 ounces) NEAR EAST Roasted Garlic and Olive Oil Couscous mix
1/3 cup apricot jam
1/4 cup freshly squeezed lime juice
2 teaspoons curry powder
1 pound boneless, skinless chicken breast halves (3 to 4)
Salt and pepper to taste
3 to 4 cups cut-up fruit (grapes, peaches, pineapple, and/or papaya)
1/3 cup slivered almonds, toasted
Prepare couscous according to package directions using olive oil. Fluff with fork; cool in a large bowl.
In a small bowl, combine apricot jam, lime juice and curry powder; stir well. Set aside 3 tablespoons sauce for coating chicken.
Season chicken with salt and pepper. Coat with 2 tablespoons sauce. Grill over medium-hot coals 10 to 14 minutes or until chicken is no longer pink inside. Halfway through, turn and coat with remaining 1 tablespoon sauce. Discard any remaining sauce used for chicken.
Lightly toss couscous with 2 cups fruit, remaining sauce and all but 1 tablespoon almonds; spoon onto platter.
Slice chicken crosswise and arrange with remaining fruit around couscous. Sprinkle with remaining 1 tablespoon almonds. Garnish with lime slices and mint sprigs, if desired.
6 Servings

Cook Time: 20 minutes

One more delicious recipe. This is one that I clipped out of Real Simple magazine. The Real Simple website has lots of delicious recipes as well. www.realsimple.com
Chicken Curry in a Hurry
1 1/2 tablespoons olive oil
1 small yellow onion, thinly sliced
2 teaspoons curry powder
1/2 cup plain yogurt
3/4 cup heavy cream
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 14.5-ounce can diced tomatoes, drained (optional)
1 rotisserie chicken
2 cups cooked white rice (optional)
1/4 cup fresh cilantro leaves, roughly chopped
Heat the oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, for 7 minutes. Sprinkle with the curry powder and cook, stirring, for 1 minute. Add the yogurt and cream and simmer gently for 3 minutes. Stir in the salt, pepper, and tomatoes (if using). Remove from heat.
Slice or shred the chicken, discarding the skin and bones. Divide the rice (if using) and chicken among individual bowls, spoon the sauce over the top, and sprinkle with the cilantro.
Yield: Makes 4 to 8 servings

Cool! Such a pretty house. :nod Did they happen to have your son and d in law's wedding there? From the movie, it looked like it had a beautiful yard. A wedding would be lovely there!

Ok so I'm a lousy cook so I can't give you a recipe...
Something funny though, when I first saw that thread listing pop up from the men's room called "Concealed Carry," I read it as "Concealed Curry," and I had to focus and re-read.
"Hey lady, I got some powerful curry under my jacket, and I ain't afraid to use it..."
My mom does an awesome chicken curry that she serves on white rice with condiments like coconut, chutney, raisins, and peanuts... mmmmm...
