    I don't have a good recipe for beans. I would love a good recipe, so if anybody has one that they're willing to share, I'd be grateful!

    Also, when I cook them, they stay hard. We have really bad well water so you can't drink it or use it to cook with. Because of that, I have to use r/o water to cook with. Could that be the problem?

    Hmmmmm...what is r/o?

    When I'm cooking a pot of soup or beans/peas, I buy a gallon of drinking water to use in them. Our city water is just not good.

    Maybe bottled water?

    Are you adding salt or tomato during the cooking? Both can cause beans to stay hard.



    Here's how I make pintos:

    4 slices bacon, diced
    1 onion, chopped
    1 jalapeno, seeded and veins removed if you don't want any heat, chopped finely
    1 lb. pintos, picked over and washed well
    salt and pepper, to taste

    Fry bacon pieces until crisp. Remove from pan. Saute onion and jalapeno until tender. Add beans, cooked bacon, and enough water to cover them by 2" or so. Let them come to a rolling boil, reduce the heat to medium-low, cover, and let them cook until tender. Check on them stirring well every 20 minutes, or so. Add water when needed. I like to keep it at least an inch above the beans. We like them soupy.
    Add salt and pepper to taste after they are completely cooked.

    After the veg. are cooked the whole "mess" can be loaded into a crock pot and cooked on low for 6-ish hours.

    Pinto beans are fairly easy to cook, I think. Here is my recipe.

    Pinto Beans

    1 lb bag of dry pinto beans,
    1 large white onion, diced
    4 cloves of garlic, minced (can add more if you like garlic)
    Fresh cracked black pepper to season (I buy the Penzey's Black India Tellicherry whole pepeprcorns)
    Salt to season (I use sea salt and use less than you would reg salt)
    3 tablespoons Fiesta Pinto Bean Seasoning, (available at Kroger and HEB and WalMart)
    1/2 teaspoon of Penzey's cumin
    3 Penzey's bay leaves
    1/2 cup Fresh Cilantro, washed, dried, leaves removed from stems and cut up
    3 tablespoons of De Cecco Extra Virgin Olive Oil
    1 gallon bottled water (drinking or spring)

    Clean pinto beans removing any split or broken or ugly looking beans and any small rocks. Put beans in colander and rinse beans rubbing them between your hands to clean. In a 5 qt pot pour olive oil and heat a minute or two adding chopped onions. Saute onions, stirring, until translucent then add minced garlic and and bay leaves, cook for a couple of minutes more (not too long as garlic gets bitter when fried too long). Add pinto beans and saute them with the seasonings for about 3 minutes. Add bottled water to pot to fill 3/4 full. Add pepper, and cumin and Fiesta Pinto Bean Seasoning. Stir, bring water to a boil then lower heat to low. Cover and cook for approximately 2 to 3 hours, stirring frequently, adding water (to keep it at 1/2 way up pot) as it cooks down. DO NOT ADD SALT WHEN COOKING AS THIS WILL MAKE THE BEANS TOUGH AND KEEP THEM FROM GETTING SOFT. About 1/2 hour before beans are done add cilantro. Before serving add salt to taste and remove bay leaves.

    NOTE: If you like meat in your pintos you can add chopped up ham or fully cooked smoked sausage cut in coins. Add the meat at the beginning of cooking to get full flavor in your beans.

    NOTE: If you are adventurous like I am you can add cut up Jalapeno or Serrano chilies to the onion and garlic when sauteing. OR you can add a small can of diced chilies (portioned to your taste).

    The Okies I know just simmer the dried pinto beans all day and spoon up and put Frank's hotsauce or whatever they have on them. They do not add anything to the pot except water.

    Sorry about that Narrow. r/o = reverse osmosis water. Should've put bottled water. We've just gotten in the habit of saying r/o instead of bottled. I'm glad you told me about the salt. It may be my problem. I've been adding it at the beginning. I won't do that this time. I think you may have saved my beans!

    Thank you Narrow and Longing for the recipes! I will give them a try. They sound delicious! We love the flavor of jalapenos and cilantro! Wish I'd have thought to put it in there.

    Hisbride - I'll be on the lookout for them.

    candlelight - I hear ya. My dad only put 'em in water. He didn't like what he called "doctored" beans. Meaning if they weren't plain, they weren't good.
    I just never had the heart to tell him that I liked mine "doctored".

    We use a crock pot! And we like 'em spicy! Easy and delicious.....everyone loves this and it gets eaten up fast.

    About 1 pound cleaned dry pinto beans............1/2 to 1 pound uncooked bacon.........Slap your Mama seasoning (just sprinkle in about 2 tablespoons to start out more or less depending on your taste)..........garlic salt...........1 chopped onion.........2 chopped up jalapenoes...........put in large crock pot.....cover with water........cook on low 10-12 hours.......

    Serve with hot corn bread...........yummmm.......this is delicious!


    The Slap your Mama Seasoning is from Louisana..........some stores carry it, most don't....but you can buy it online....or you can use Cajun seasoning (Tony's)

    Thank you very much. I'll try this one out too. Thanks also for the info about buying Slap Your Mama online. One of my daughter's friends from camp is from Louisiana and she told me about it. I always wondered if it would give me smokin' hot chili. Now that you told me I can get it online, I'll definitely be ordering!!!

    Ok, adding a super silly question here....when you clean the beans do you have to dry them before cooking them? Yes, I've never cooked beans before....

    Also, does anyone soak their beans in water awhile before cooking?

    No. You cook them in water so they'd just get wet again anyway. I don't think your question is silly at all. You never know until you ask.

    When I mentioned "dry" that means that the beans come in a bag and are dry beans. This differentiates them from pinto beans that come in a can that are already cooked.

    Your question was just fine and no it was not a silly question. That is how we learn. I am always asking questions.

    Oh, ok....that makes sense! Yeah, I've decided to stock up a bit on pinto beans (in a dry bag), and it's great getting some good tips here! :-)
