Scalloped Potato's with Ham (I do not use green pepper in mine and you can make with or without cheese)
Ingredients
1/2 cup butter
1/2 cup flour
2 teaspoons salt
1/2 teaspoon pepper
3 cups milk
3 cups ham, cooked
1 large green pepper, chopped
1 large onion, chopped
1/2 cup cheddar cheese, shredded
5 cups potatoes, pared and sliced
Directions
1Melt butter in large sauce pan over low heat; blend in flour, salt, and pepper.
2Cook, stirring constantly, for about 1 minute. Remove from heat gradually stir in milk.
3Return to heat; cook until thickened and bubbly.
4Fold in ham, onion, green pepper and cheese. Pour over potatoes in a large bowl.
5Stir gently then move into a buttered 13X4-inch baking dish; cover with foil.
6Bake at 350 degrees for 30 minutes.
7Uncover and continue to bake for 1 hour.
8Let stand for 10 minutes before serving.
This sounds good for the scalloped potatoes.
I will cook the ham separately this time, but keep this recipe on hand for future reference.

Scalloped Potato's and Ham
2 lbs. russet potatoes
1/4 tsp. black pepper, or to taste
1-1/3 cups ham, diced
3/4 cup onion, chopped
1/4 cup parsley, chopped
1/3 cup grated Parmesan cheese
2/3 cup grated Jarlsberg or Swiss cheese
2/3 cup sour cream
1 cup cream
2 tsp. minced garlic
1/2 tsp. salt, or to taste
1 tbsp. butter
1. Preheat oven to 350°F. Butter an 8” x 8” glass baking dish.
2. Sauté the diced ham over medium heat for 7 minutes or until cooked through.
3. Peel and slice the potatoes 1/4 inch thick. Toss in a large bowl with pepper, ham and onion. In a small bowl toss together the cheeses with the parsley.
4, Layer half of the potato mix in the baking dish. Sprinkle with half the cheese mixture and top with remaining potatoes.
5. Whisk together the sour cream, cream, garlic and salt and pour evenly over the potatoes. Sprinkle with remaining cheese mixture and dot with butter.
6. Bake for about 1 hour and 15 minutes or until browned and potatoes are completely tender when pierced with a knife.
I cook the scalloped potatoes in a crockpot.
1. Pour small amount of Half &Half (or whole milk) in the bottom of a 5 quart crockpot.
2. Place one layer of sliced potatoes on the bottom of the crockpot.
3. Salt & Pepper.
4. One layer of coursely chopped onions on top of the potatoes.
5. One layer of sliced or shredded cheddar cheese on top of the onions.
6. Pour small amt of Half & half/milk over the cheese.
Repeat all six steps in order until the crockpot is filled.
Cook on LOW about 6 to 8 hours.
Makes about 14 generous servings.

I must confess that I experimented on my nephew & his party guests on New Year's Eve.
I needed his oven for baking the ham, so I thought I'd try my oven recipe in the crockpot.
It was such a hit that one of his friends asked me for my recipe.
The crockpot method is much better for feeding a crowd, & doesn't require as much attention during baking.
In a large bowl mix 5 lbs of peeled and sliced potatoes with 1 can of celery soup, 1 can of water, 1 medium onion chopped,4 slices Old English Cheddar cheese broken into pieces, salt and pepper. Pour into baking dish and bake at 350 until the potatoes are tender. She didn't write a time, just put until tender.You won't have leftovers, she never did.
Eye balled bacon ranch Scalloped potatoes
This takes a long time but is really good. (I know, it's probably too late now)
Maybe I eye ball everything because I never know how I'll need to make.
Yukon gold potatoes
onions
carrots
milk
flour (or cornstarch)
heavy cream
chicken broth
bacon ranch dressing
Cooked bacon strips
bread crumbs
Butter
salt and pepper to taste
1.) Thinly slice yukon potatoes, onions and carrots. Layer in a buttered baking dish.
Sauce (Slow and fast option)
2.) (Slow) In a sauce pan, melt some butter. Add a some flour and stir constantly until mixture browns some but does not burn. This will be your Roux or thickener. Add milk, and cream, salt and pepper.
2.) (Fast) You can also Put milk, chicken broth, and cream in a bowl with salt and pepper and add cornstarch while cold.
3.) Add sauce to potatoes. Top with bread crumbs.
4.) Put in oven at 350° F for 45 minutes.
Add strips of bacon, light drizzling of ranch dressing and more bread crumbs on top.
Cook for another 45 minutes or more. A total time of 2 hours is the most you should need.
*If desired or if top isn't crispy enough, you can broil it for a minute of two.
Enjoy bacon ranchy goodness.

EZ BREEZY CHEESY POTATOES-
(Don't shoot me, I never measure anything) but I'll give you some guestimates.
spread 1 large bag frozen hash brown potatoes in a baking dish or 13 x 9 inch pan.
Add salt & pepper & dried onion flakes to taste. Add 1 cup cooked ham cubes.
Make a cheese sauce with Velveeta (about 2/3 pound) chunked up & 1/2 stick butter in 1 1/2 cups milk. You can microwave in a large bowl or heat in a saucepan, stirring til smooth. Add more cheese to thicken or more milk to thin, you want it to 'pour' but be of a little thicker consistency, (not milky, more like a sauce) and pour over potatoes.
Cover tighly and bake for 35-40 minutes @ 350. Remove foil and you can sprinkle with any kind of cheese to garnish, melt til cheese bubbles.
I make these alot when I cater banquets, so easy and good. Takes only a few minutes. You can also use cheddar or any other cheese but they won't melt as creamy as velveeta. Sometimes I combine with other cheeses though.
I also like them with bacon or sausage cut up or even meatless as a side for chicken.
