    Son-in-law cooked with daughter's help. He made pork roast. Daughter did boiled potatoes, steamed asparagus, corn and crab dip with bread chunks.

    Was at youngest daughters pool party today and we had killer burgers with cheese and fried onions, several different salads, all kinds of appies, and ice cream cones for the kids or young at heart.

    i pulled out a few half picked roasted chickens out of the freezer (if i don't have time to pick the meat off and make soup i just freeze it for later) stuck them in the pressure cooker with about a quart of water and let them go for about 1/2 hour. i picked all the meat from the bones, then made stir fried rice to mix with the meat. i'll chill the broth and collect the schmaltz off it and freeze the broth separately. that way the broth won't be too greasy but i can make chicken liver pate sometime. broth from pressure cooked bones is so good, the texture is smooth from all the gelatin coming out in it.

    anyway, so supper is fried rice or picked chicken meat, self serve....

    i'm too tired after the MIL visit

    Had to go to the comissarry today se we got krystal burgers before we shopped and still spent a fortune. We only buy our beef from the navy commissary as it is soooooo much cheaper than other stores. Only go about every month or so and stock up on stuff we can't afford in reg stores.

    Dessert:
    Pie Crust:

    1 cup butter (2 sticks), cubed and chilled
    2 1/4 cups all-purpose flour
    1 teaspoon salt
    8 to 10 tablespoons ice water
    Put the butter, flour, and salt in the food processor, and pulse lightly just until the mixture resembles wet sand. Add the water, 1 tablespoon at a time, pulsing briefly after each spoonful of water. Keep adding water until the dough just begins to gather into larger clumps. Transfer equal amounts of the dough into 2 resealable plastic bags and pat each into a disk. Let rest in the refrigerator for at least 30 minutes. Remove 1 of the disks from the bag to a flour coated surface. Using a rolling pin, roll the dough out to a 10-inch round.

    Instead of putting the crust in a pie tin make a bunch of 4" round pieces and fill the center with Seedless Blackberry of Raspberry Jam. Fold and crimp the sides. Brush and egg wash over them (1 Egg yoke and a splash of water) dust them with Splenda or powdered sugar, then bake for 10 minutes at 475. Drizzle melted chocolate over for a sweet accent to the tart jam.

    Tonight's salmon steaks met with approval. I pulled out my last frozen prime rib roast to prepare for tomorrow. By posting tomorrow night's dinner tonight, there will be a void in my life tomorrow... I can read this thread tomorrow, but not post...
