    Here you go...it's really simple to make and super yummy!


    3 tablespoons butter or olive oil
    1 small red onion, diced
    1 celery stalk, diced

    Add chicken stock or broth, water, salt and pepper; bring to a boil and then reduce to a simmer; cover and let cook for 20 minutes, stirring once halfway through cooking time.

    After rice is cooked, stir in half a can of the cranberry sauce and the walnuts.



    I especially like to serve this as a side dish with a mild white fish, such as tilapia or orange roughy.

    DH sang at a seniors apartment complex tonight. They had a covered dish dinner - grilled hot dogs with fixings, chips and dessert. Dh didn't tell me until today so I had to take deli potato salad and cold slaw. One African-American lady broke out in song by herself and a Latino lady asked if she could give a testimony. It was a wonderful evening.

    Supper salads, and hot crusty bread. Virgin banana pina coladas (sp?) for dessert. We went for wings instead, and thank God we did, I was going to use some of that bad romaine lettuce.

    It's a soccer night so it is sweet and sour meatballs, rice, honeyed carrots and homemade bread leftover from yesterday. Fast, easy to make and hubby and kids like it too. Yummy!!
