    low carb "spaghetti"

    We're on a comfort food kick. It's blazin' hot out, but we're all sick and hot food is soothing.

    Leftover pasta and meat sauce. Cook once, eat 3x. I did include fresh garlic toast and green salad.

    We were going to smoke some brisket, kielbasa, and chicken, but...we're all sick. Still. No one felt like manning the smoker much less eating.

    Dinner will be sugar-free Popsicles.

    I had a bunch of red peppers that I had to use otherwise they would have went bad. So I sauted them in olive oil with some sweet onion, cooked up some chicken and brocoli florets and served over bowtie pasta with a mushroom sauce. Turned out really good!

    low carb spaghetti - I use a veg. peeler specially made to sort of julienne long strips of zucchini. I saute them in a little butter and a pinch of salt and top them with meat sauce.

    low carb taco salad - everything normally on a taco salad minus any chips or tortilla bowl...lettuce, beef, cheese, a few pickled jallies, some sour cream etc....
