    Red beans and rice, sausage and buttered cornbread....umm.

    Made on Tuesday instead of on traditional Mon bc my son poured out the red beans soaking in a bowl in the sink yesterday. Little stinker

    Its basically a chicken soup (but with beef broth- & shredded thigh of chicken)with sliced celery and quite a bit of Frank's Hot sauce, mine was low carb, so i thickened it with beaten egg and xanthan gum, but flour/butter or cornstarch should thicken it nicely.

    i didn't have any on hand, but i bet finishing it with crumbled bleu cheese would be a nice extra touch.

    i had a can of tuna with mayo and some French onion soup from a packet (no crouton or cheese)... leftover cheeseburger pie for hubby. the girls went to my parents' this evening and they had mac n' cheese, ring pops and hot cocoa
