    Last night I made myself a good meal. This menu was way too much work and dishes for one person. I like to simplify things more.

    I had: (one of the favorite meals)

    Broiled London broil
    Fried onions in butter
    Smashed red potatoes
    Green bean casserole
    Tex-Mex garlic toast fried up in the onion pan after the onions were removed
    Applesauce
    Pepsi or Milk (I forget)

    I do have leftovers of everything except the onions but that is way too much preparing for me. I like cassaroles and crock pot meals, easy and simple.

    Tonight I am having left over hot BBQ wings with blue cheese dressing and celery that I bought from "Wings To Go". Tomorrow I will have the leftover London broil I guess, but I need some au jus (whatever you call that) in a can as the LB will be too dry if reheated without it. I used alot of juice the first time around.

    Not much! I'm having a colonoscopy on Friday and have to do a 2-day prep so I can only have clear liquids - broth, Jello, Kool-Aid, etc. - starting today. Pray for me!
