I have to change my answer, for some reason I thought it said which animal would I most like to try eating in heaven. Now that I noticed it said " riding" I don't want to chose dolphin anymore.
I'll go with polar bear.....although I wouldn't mind tasting that either.

I'll be riding large canines & felines (including saber-tooths) which have gone extinct as well as flying on large eagles. Pterosaurs will be flown as well and T-Rex will be ridden alongside Spinosaurus (although they won't fight like in JP3).

Elephants. I rode an elephant once, at a county fair. Mostly just kids
were lining up, but my two boys were little and I wanted to get up
there and go for a ride, too! ( And to make sure they didn't fall off)
It was amazing! Like a rocking chair in super slow motion.
Love to ride a zebra, too. They are supposed to be
un-rideable here on earth now.
