What's for Easter Lunch?
We're having ham, choice of baked potato or baked sweet potato, biscuits, brussels sprouts, Asian medley veggies (broccoli, snap peas, carrots, baby corn), and bowl cake for dessert.
Bowl cake is easy -- cut/tear up an angel food cake into bite-size pieces (or if you're like my MIL, cut the cake crosswise into layers), and layer in a bowl with your favorite pudding(s) and top with Cool Whip, and put in the fridge until it's cold if you wish. If you don't care for pudding or if you prefer fruit or are diabetic, you could substitute fruit for the pudding, though we are using sugar-free pudding and lite Cool Whip since DH is diabetic. Putting strawberries with it instead of pudding would make it a great mock-strawberry shortcake, or bananas and banana pudding would be good too.
