    Default What's for Easter Lunch?

    We're having ham, choice of baked potato or baked sweet potato, biscuits, brussels sprouts, Asian medley veggies (broccoli, snap peas, carrots, baby corn), and bowl cake for dessert.

    Bowl cake is easy -- cut/tear up an angel food cake into bite-size pieces (or if you're like my MIL, cut the cake crosswise into layers), and layer in a bowl with your favorite pudding(s) and top with Cool Whip, and put in the fridge until it's cold if you wish. If you don't care for pudding or if you prefer fruit or are diabetic, you could substitute fruit for the pudding, though we are using sugar-free pudding and lite Cool Whip since DH is diabetic. Putting strawberries with it instead of pudding would make it a great mock-strawberry shortcake, or bananas and banana pudding would be good too.

    Ham, potatoes, veggies, salad, cookies and biscuits. I'm having my daughter and 3 grandbabies for church then here tomorrow. I filled 75 eggs with candy for the kids. Can't wait!!

    I have limited energy, so it went to the Bible Handout. Ron's happy no dishes or stove heating up the house.

    If I'm feeling ambitious, I might make some cornbread in the toaster oven.

    Going to MIL's house, I'm bringing the ham...no idea what everyone else is bringing. But, my MIL is a wonderful cook, so I know it will be GREAT!

    Ham, candied ginger yams, apricot noodle salad, potato casserole, fresh veggie plate, and hot cross buns. Chocolate dipped strawberries and pumpkin pie for desert.

    Smoked brisket and ribs, cooked-to-death green beans, baked sweet potatoes, dressing (made from almond meal instead of corn), cranberry salad, and deviled eggs.

    For lunch it will be an egg sandwich and a cup of yogurt

    Coulibiac! It's puff pastry filled with salmon (but we're doing chicken tonight), onion, mushrooms, spinach, fresh dill, hardboiled egg - and then all baked inside the puff pastry. Tastes delicious and looks elegant. For dessert, strawberries on angel food cake drizzled with chocolate.
